Ingredients

4 servings
  1. 1 smallcan each of haricot, boretti and pinto or blackeyed beans , drained and washed
  2. 2 tbspolive oil
  3. 2 smallonions finely chopped
  4. 2 tbsptomato puree
  5. 2sprigs each rosemary and basil
  6. 1 smallred chilli pepper ( optional)
  7. 3/4 litervegetable stock (add more if needed)
  8. 1good pinch of salt and fresh cracked pepper
  9. 1 cupof soup pasta or orzo, rice sized pasta.

Cooking Instructions

    boil the beans gently for about 3/4 if an hour

  2. 2

    drain and puree half of them.

  3. 3

    saute the onions in olive oil

  4. 4

    add to the pureed beans

  5. 5

    add chopped chilli If you like

  6. 6

    add the stock basil, rosemary and tomato puree

  7. 7

    add the whole beans heat to boiling point and add the pasta

  8. 8

    cook for about ten to 15 minutes

  9. 9

    season with salt and pepper

Fantastic hearty soup. I reduced the orzo to 1/2 cup and still very filling.
