Crispy edges with a chewy center and a strong cinnamon and molasses flavor make these cookies a hit every time. They're one of my favorites!
Steps

Cream together the butter and sugar

Whisk together the egg and molasses. Slowly incorporate into batter.

Sift together the flour, baking soda, cinnamon and salt. Slowly mix into batter, working in batches.

In a small bowl, mix together a spoonful of sugar and a spoonful of cinnamon for sprinkling.

Dish onto parchment, silpat or greased pan. I like a #40 disher (1.75 tbs). Sprinkle each cookie with a pinch of the cinnamon sugar. Do not flatten.

Bake at 350°F for 10 minutes.
