Before I I became a full time home based cook, I used to eat out a lot. A simple meal of a main dish and a vegetable dish for 2 at a restaurant would easily set me back about SGD30 and that was then. Since being my own cook and cooking for my love ones I know I can cook the same dishes for a fraction of what I would have to pay if I am to eat out now. This recipe is one of our favorites, it easy and doesn't take long to prepare. Do give it a try and give me your comments. Enjoy.

Dried Chili Chicken

Ingredients

  1. 250 gramsBoneless, skinless Chicken Fillet
  2. 1 mediumOnions
  3. 1 clovegarlic
  4. 4 sliceginger
  5. 4 eachDried Chilies
  6. 1 tbspCanola Oil
  7. Marination
  8. 1 tbspOyster Sauce
  9. 1 tbspChili Sauce
  10. 1 tspDark Soy Sauce
  11. 1/4 tspwhite pepper
  12. Garnished (Optional)
  13. 1 bunchSpring Onions
  14. 1/4 cupToasted Cashew Nuts

Cooking Instructions

  1. 1

    Cut the chicken into 1,5 cm chunks

  2. 2

    Marinate the chicken for at least 10 minutes.

  3. 3

    Cut the onion into 8.

  4. 4

    Finely chopped the garlic.

  5. 5

    Washed and cut the dried chilies lengthwise .

  6. 6

    Heat oil in a wok or fry pan at HIGH

  7. 7

    Sauté Garlic and Dried Chilies, till fragrant NOT burnt

  8. 8

    Add the onions and ginger, and continue Stirling till the onion softened .

  9. 9

    Add the marinated chickeen and stir for 2 minutes.

  10. 10

    Removed and served with any vegetable dish on a plate of white rice.
