Ingredients

  1. 3chicken breasts
  2. 1Onion or 4 Shallots
  3. 4Carrots Chopped
  4. 1 packagesFrozen mixed Veg
  5. 2 cloveGarlic
  6. 400 gramsnew potatoes
  7. 1 canChopped Tomatoes
  8. 2chicken Stock cubes or boulions
  9. to tasteSalt & Pepper
  10. 1 tbspBalsamic Vinegar
  11. 1 tbspWorcestershire Sauce (optional)
  12. 2 literWater
  13. 1 handfulBroad beans

    Ingredients

    Add one tablespoon of olive oil and let it heat up. Chop onions, crush garlic, and cut chicken into cubes. Fry onions for 1 minute then add the crushed garlic, fry them and add the chicken.

    Turn heat on and put the saucepan on to boil. Add the herbs, chicken stock cubes, balsamic vinegar and Worcestershire sauce.

    While the chicken is cooking, in a large saucepan add the tomatoes, broccoli, carrots, mixed veg and potatoes, water and broad beans and bring to the boil

    When the chicken is white and no pink colour add it to the pan of veg, bring to boil, add the salt & pepper. Add the lid and then simmer for 1 - 2 hours stirring occasionally, simmer on the lowest.

    If you want it to be thicker, just add 2 tablespoons of corn starch in a little water. Serve with crusty bread to dip.
