Easy breakfast baskets that I made for my dad on gathers day. He's a bit of a health freak and ditests anything cooked in oil esp. his eggs and bacon. He loved them and ate 3 servings to himself. This receipe can also have variations where ou can scramble the eggs making it an omlette adding baked beans, or tomatoes, onions and greens like spring onion. Very simple and oil free.

Ingredients

  1. 1 loafStore bought sliced bread
  2. 1 dozenlarge eggs
  3. 1 kgshoulder bacon in strips
  4. 1/4 lbbutter salted or unsalted
  5. 1salt
  6. 1pepper
  7. 1 cancreamcorn (optional)

Cooking Instructions

    Preheat oven to 180°F celcius and greese large muffin trays well.

  2. 2

    Butter sliced bread and slightly cut each side of the bread to allow a nice fit in the muffin tray.

  3. 3

    Wrap uncooked bacon strips inside the bread. (almost lining the sliced bread).

  4. 4

    Add a tablespoon of your choice of cream corn at the bottom inside the bread in each cup. (this step is optional)

  5. 5

    Crack open one egg sunny side up into each muffin cup to complete the breakfast basket.

    Add salt and pepper to taste. Then put in oven until eggs are cooked and bacon crispy (about 15-18 minutes).
