Ingredients

  • 1 tspbaking soda
  • 2 1/2 cupAP flour
  • 1 tsppumpkin pie spice
  • 1 tspvanilla extract
  • 1/2 tspsalt
  • 1 cupraw honey
  • 2eggs
  • 2 cupor a 15 oz can pumpkin puree
  • 1/2 cupapplesauce
  • 1 cupfresh blueberries

Steps

    Preheat oven 350°F

  2. 2

    Mix all dry ingredients. Add the rest, except berries and mix partially. Fold in berries. Do not over mix. Spoon into lined muffin tins.

  3. 3

    Bake 18-20 minutes or until inserted toothpick comes out clean.

  4. 4

    Let rest in pans for 15 minutes then transfer onto cooling racks and cool completely. Store in an air tight container.

Started cooking/baking with Gram just as soon as I was old enough to stand in a chair, with her apron tied around my chest. Made my first solo Thanksgiving meal at age 8. Putting a new flair on classic nothern New England style cooking.
