Cooking Instructions

To make the stem ginger in syrup: put the sugar and boiling water in a small pan. Add the 9 pieces of ginger, bring back to the boil then simmer for 20 minutes. Add tablespoons of water if it reduces too far. Bottle, cool and refrigerate until needed. This is now preserved and will will keep for a few months after opening

To make the cake: put butter and sugar into a mixing bowl and cream together.

Beat in the dark treacle or dark brown sugar

Add the eggs 1 at a time and beat then in until you have a smooth batter
- 5
Sift the flour, ginger and mixed spice into the batter, then add ¾ of the stem ginger straight on top of the flour and fold in roughly. It's ok for the batter to now be lumpy

Pour the batter into a prepared loaf tin. I put a strip of greaseproof paper across as in the picture and lightly grease the sides. This makes it easy to lift out.

Bake for 30 minutes at 180ºC

Remove from oven and slowly drizzle syrup from the ginger jar over the top of the cake sprinkle over the remaining chopped ginger

Lift from tin and cool on rack. Nice warmed up with custard, cream or ice-cream

This cake is inspired by the amazing Chef John @foodwishes. This cake is moist, dense and fudgy. The only kinda cake which I would eat, as you should have known by now. I love the wonderful aroma of gingerbread spice, especially during final baking process. If I were to compare my previous pumpkin cake and this gingerbread cake, I would definitely go for gingerbread.What really got me is the hint of molasses aftertaste. It lingers at the back of my mouth for quite awhile which leaves me wanting for more. Pls do not use fresh grated ginger. It will overpower everything else (speaking from experience). Just use regular ground ginger. I also added a pinch of Chinese 5 spice for that oomph undertone flavor.I also decided to add a touch of lemon glaze to bring freshness to the cake. You can of cos serve the cake as it is, or you can go the extra mile and serve it with ice cream and tuile. Pls do not be intimidated by the look of it. It is actually fairly simple and easy. If all hell breaks loose, try again cos at the end of the day, it is just a kitchen fail down the bin. What you gain is experience, which is priceless. Cooped up this weekend with a terrible cold, I couldn’t help myself but make a warming cake fit for the temperature drop here in Bristol.I adapted this recipe from one found online (https://www.mamagourmand.com/almond-flour-apple-cake/) but fit for my 7 inch cake tin. I also added ginger and cinnamon for real autumnal feel. Measurements are approximate, as I always measure with the heart (even when baking 😅)Will definitely make this again, so step photos to come!
