Ingredients

  1. 1 cupsliced fresh strawberries
  2. 1 cupfresh raspberries
  3. 1 cupfresh blueberries
  4. 1 tbspminced fresh mint
  5. 5 tbspsugar, divided
  6. 1 cupheavy whipping cream
  7. 1 tbsplemon juice
  8. 1 tspgrated lemon peel
  9. 3 tbspbutter, softened
  10. 6 slicepound cake (about 1 inch thick)

Steps

    In a large bowl, combine the strawberries, raspberries, blueberries, 2 tablespoons sugar, and mint.

    Set aside.

  3. 3

    In a small bowl, beat cream until it begins to thicken.

  4. 4

    Beat in remaining sugar.

  5. 5

    Add lemon juice and peel.

  6. 6

    Beat until soft peaks form.

  7. 7

    Cover cream mixture and refrigerate until serving.

  8. 8

    Spread butter over both sides of cake slices.

  9. 9

    Grill, uncovered, over indirect medium heat for 1 to 2 minutes on each side or until light golden brown.

    Serve with berry mixture and whipped cream.

Some of my favorite things are family, friends, my pets, cooking, baking, football (Badger & Packer), Brewer baseball, college basketball, car racing, thrift stores, volunteering, and rummage sales. I have a 9 year old rescue dog, and 7 birds ( 6 are rescue) and they range in age from 1 year to over 19 years old. I volunteer for a dog rescue and a shelter, as well as other festivals and organizations.
