Ingredients

30 mins
1 serving
  • 250 gramsCooked cold Rice
  • 100 gramsStreaky Bacon (fat trimmed if you are on a health kick)
  • 1Egg
  • 1Scallion (Not a spring onion, its Irish Fried Rice after all)
  • 15 mlOil for cooking (your choice).

Steps

  1. 1

    Chop the bacon into small pieces

  2. 2

    In a dry hot wok fry the bacon until crispy

  3. 3

    Drain the bacon to a bowl for later,

  4. 4

    Reserve the bacon fat for other recipes.

  5. 5

    Add the oil to the wok(with the bacon fat if you like (Waste not want not)) and heat to smoke point

  6. 6

    Add the Rice to the Wok, stir immediately and continuously

  7. 7

    You are only heating up the rice really so it goes quick

  8. 8

    Add back in the bacon keep the rice moving

  9. 9

    Make a well in the center of the rice and crack in the egg

  10. 10

    Scramble the egg immediately and stir into the rice and bacon

  11. 11

    Add the chopped spring onion I mean Scallion.

  12. 12

    A couple of drops of Sesame Oil at this point for add flavor is allowed but not too much as to overpower the bacon.
