Ingredients

  1. 2 tbspbutter
  2. 1/4 cupdiced onions
  3. 1 cupdiced mushrooms
  4. 1 tspchopped garlic
  5. 10 ozPre cooked Ground Turkey
  6. 1/2 tspdry Thyme
  7. 1/4 cupWhite flour
  8. 1/2 cupcooking white wine
  9. 6 cupchicken broth
  10. 1/2 cupparmesan cheese
  11. 1 cupmilk
  12. 1/2 cupshredded Italian cheese mix or mozarella
  13. 2 cupchopped spinach

Cooking Instructions

    Melt butter in med size pot.

    Add diced onions, mushrooms and garlic until ALMOST dry.

  3. 3

    Add flour and half of white wine until all mixed together (about 3 minutes), then add rest of white wine. Cook another 3 min.

    Add broth, turkey sausage, thyme and tortellini. Simmer until tortellini is tender (about 8-10 min).

    Add Parmesan. Stir for 1-2 min.

    Add 1/2 of the milk until simmering.

    Add spinach until wilted.

    Add salt and pepper to taste.

  9. 9

    Add shredded cheese and simmer to desired thickness.

    Once the soups sits, it will become thickened. Add remaining milk and reheat as needed.
