Ingredients

  1. 1 cupQuinoa
  2. 1 canCorn (drained)
  3. 3 cupFresh spinach
  4. 1/2 cupChopped/diced red onion
  5. 1/4 cupRanch
  6. 1 tbspNew Mexico red chile (cayenne for substitute)
  7. 1Lime salt (beer salt)
  8. 1Oregano
  9. 1Salt and pepper

Steps

  1. 1

    Cook quinoa according to directions.

  2. 2

    Mix all ingredients together in a large bowl.
    Stir well while warm to slightly wilt spinach.

    Enjoy hot or cold.
