Ingredients

  • 1 2/3 cupAll purpose flour
  • 1 tspBaking soda
  • 1/4 tspGround cinnamon
  • 1/2 tspSalt
  • 1 cupSugar
  • 2 tbspSugar
  • 2Eggs
  • 1/2 cupOil
  • 3 1/2Very ripe mashed bananas
  • 2 tbspSour cream
  • 1 tspVanilla extract
  • 2/3 cupWalnuts, toasted and chopped

    Set oven to 350°F. Line the bottom of a loaf pan with parchment paper.

  2. 2

    Sift together the flour, baking soda, cinnamon and salt.

  3. 3

    Beat sugar and eggs with a whisk until light and fluffy, about 10 minutes.

  4. 4

    Drizzle in oil. Add mashed bananas, creme fraiche, and vanilla.

  5. 5

    Fold in dry ingredients and nuts.

  6. 6

    Pour into a lined loaf pan and bake for about 1 hour. Toothpick to test.
