This is really just another version of my cream of broccoli soup but substituting some ingredients to make it greener! Served with my snake breadsticks!

Ingredients

30 mins
6 servings
  1. 2leeks, sliced
  2. 250 gramsbroccoli florets
  3. 250 gramspotatoes, peeled and diced
  4. 600 mlvegetable or chicken stock
  5. 100 gramsfresh spinach leaves
  6. 200 mllight coconut milk or milk of choice
  7. freshly ground black pepper

Cooking Instructions

30 mins
  1. 1

    Put the potatoes, broccoli and leeks into a soup pan with the vegetable stock, cover and bring to boil

  2. 2

    Cover and turn down to a simmer for 20 minutes. Don't worry if the liquid doesn't cover the vegetables. They'll steam with the pan lid on

  3. 3

    Add the spinach and stir in until wilted, 30 seconds or less

  4. 4

    Pour into a blender and puree smooth

  5. 5

    Pour back into the pan and stir the milk through over a low heat

  6. 6

    Season to taste

  7. 7

    A great way to get lots of iron and vitamic C into the kids!
