  1. 1/3 cupSour cream
  2. 4 tbspButter
  3. 1/2 cupMonterey Jack Cheese
  4. 1/2 cupCheddar Cheese
  5. 1/2 cupReal Bacon Bits
  6. 1 tspGround Black Pepper
  7. 1/2 tspGarlic Salt
  8. 1/2 tspOnion Powder
  9. 1 tbspChopped Fresh Chives
  10. 2 tbspChopped Fresh Green Onion
  11. 2Russet Potatoes
  12. 1/4 cupOlive Oil

  1. 1

    Wash potatoes. Poke holes in each potato, brush with olive oil and cover with foil. Bake at 400 for 1 hour and 15 minutes.

  2. 2

    When potatoes are close to done, mix remaining ingredients in bowl.

  3. 3

    When potatoes are done, reduce heat to 350 and remove from oven. Slice open carefully lengthwise. Remove meat and add to other ingredients.

  4. 4

    Mix everything well and carefully spoon back into empty potato skins.

  5. 5

    Return to oven and bake for 20 minutes (at reduced heat of 350).

  6. 6

    Once done, garnish with toppings such as bacon, cheese, sour cream etc. Whatever you wish.

  7. 7

    Serve hot and go on diet tomorrow!!!
