Neapolitan Layer Cake

This cake dedicated to my Dad, who treated his kids to ice cream all summer. It was a fun event to go to the local creamery for homemade ice cream. Living in New England however meant all the creamerys shut down for the winter. My Dad would bring home neapolitam ice cream in the winter from the grocery store saying it was perfect with 3 flavors in one! When I was getting into making layer cakes this was one of my first. It is time consuming but easy to prepare. It is a crowd pleaser and the flavors of the cake are delicious!

MAKE CAKES.

For all three cakes, preheat oven to 350. Spray 6 - 8 inch cake pans with baking spray

MAKE CHOCOLATE CAKE

In a bowl whisk flour. Cocoa powder, baking sofa, baking powder and salt
- 5
In a large bowl best sugar oil and egg until combined add 1/2 of flour mixture and stir until just combined
- 6
Add coffee, buttermilk and vanilla. Then add remaing flour mixture and beat just until smooth

Divide between 2 of the prepared cake pans and bake about 15 to 20 minutes until a toothpick comes out just clean Cool 20inutes in pan before removing to cool completely

MAKE VANILLA CAKE

In a bowl whisk together flour ,baking powder and salt

In a large bowl beat egg whites until stiff peaks form

In another large bowl beat butter and sugar,until light and fluffy. Beat in half the flour mixture, stir in milk, and vanilla, add remaining flour mixture and stir just until blended

Fold 1/3 of egg whites into batter, then add remaining folding in 2 more additions. Pour into 2 prepared pans and bake 12 to 19 minutes until a toothpick just comes out clean. Cool 10 minutes in pan before removing from pans to cool completely

MAKE STRAWBERRY CAKE

In a bowl whisk together, flour, baling powder and salt

In a large bowl beat sugar, jello powder and butter until light , beat in eggs one at a time until smooth

Alternate flour mixture with milk and vanilla stirring just until combined, fold in strawberry puree until uniform in color. Pour into remain in 2 pans. Bake 18 to 25 MI utes u til a toothpick comes out jut clean. Cool 10 minutes in pan the cool completely

ASSEMBLE CAKE

Place 1 chocolate layer bottom side up on serving plate

Frost with layer of White chocolate ganache frosting, recipe attached below

Add 1 layer of vanilla cake, bottom side up and frost with Chocolate Ganache frosting, recipe attached below

Add 1 layer of strawberry cake, bottom side up and frost with White chocolate ganache frosting

Add last vanilla layer, bottom side up and frost with Chocolate Ganache

Add last chocolate layer and frost with chocolate ganache

Add last white layer top side up and frost entire cake with White chocolate ganache

Garnish with fresh strawberrys and sprinkles
