Nacho cheese Dorito casserole

There are many versions of this on Pintrest and this is my version! You could also use ground beef or (other ground meat) with half a pack of taco seasoning, which I will be trying next! The topping are endless and it can be altered to your liking. I used lowfat/fat free ingredients where I could to make it a little bit healthier.

Ingredients

  1. 3 clovegarlic, grated
  2. 1shallot, grated
  3. olive oil
  4. 1/2rotisserie chicken, chopped in small pieces or shredded. (save the other half for a different meal)
  5. 2 cancream of chicken or mushroom/ or 1 of each
  6. 1 canmilk, use soup can to measure
  7. 1 cupcorn, if using frozen heat up in same pan the garlic and shallots were in
  8. 1 canblack beans, drained and rinsed
  9. 1 cupsour cream, maybe an Extra 1/2c
  10. 1/4 cuppremade queso dip
  11. 1 canrotel
  12. 1 tspground cumin
  13. 1 tspchili powder
  14. 3 cupshredded cheese, divided
  15. nonstick cooking spray
  16. 1/2bag nacho cheese doritos
  17. 1/2spicy nacho doritos
  18. lettuce
  19. tomatoes
  20. onions
  21. Pico de gallo
  22. guacamole
  23. sour cream

Cooking Instructions

    Heat oil in small skillet. Add shallot and garlic. Cook about 2 minutes, until fragrant.

    Combine soup and milk in LG bowl.

  3. 3

    Add chicken, shallot garlic mix, seasoning, corn, beans, queso, rotel, sour cream, 1/2 shredded cheese to soup mix. Mix evenly.

    Combine both flavors of doritos in LG ziplock bag and crush, using your hands or rolling pin.

    Preheat oven to 350.

    Spray LG casserole dish with cooking spray.

    Spread 1/2 crushed doritos on bottom of greased dish. Add bean, corn, cheese mixture ontop. Top with other half of crushed doritos and the other half of cheese.

    Bake for 30 minutes.

    Top with whatever toppings you'd like and enjoy!

    Remove from oven. Let cool for 5-10 minutes.

I am a mom of 4 kids and 1 crazy dog. ..My 7 year old and 6 month old live with me full time, while my 5 and 4 year old only come to visit.
