I found this recipe on YouTube and tweaked it a bit. You can use whatever ground meat you choose; the pork came out great. I used less bamboo shoots than the recipe calls for, but that's my preference.

Ingredients

4 servings
  1. 1 lbground pork
  2. 3 clovegarlic-minced
  3. 1/2 mediumonion-diced
  4. 1 tbsplemongrass-minced
  5. 1 tbspfresh ginger-minced
  6. 1 tbspcanola oil
  7. 1salt
  8. 1fresh ground black pepper
  9. 2 tbspgarlic chili sauce
  10. 2 tbspfish sauce
  11. 1 tbsprice vinegar
  12. 1 tbspsugar
  13. 5 ozwater chestnuts-drained and diced
  14. 5 ozbamboo shoots-drained and diced
  15. 1/2fresh jalepeno-minced
  16. 1 tspsesame oil, or to taste
  17. 4green onion
  18. 1/2 cupcilantro-chopped
  19. 1lime wedges
  20. 8lettuce leaves, butter lettuce or romaine

Cooking Instructions

    Heat canola oil in pan.

    Sauté garlic, onion, lemongrass, and ginger on med heat about 5 mins.

    Add ground pork, or ground meat of your choice. Mix well.

    While meat is simmering, make sauce. Add garlic chili sauce, fish sauce, rice vinegar, sugar, and ground black pepper.

    Add sauce to meat and stir.

    Add water chestnuts, bamboo shoots, and jalepeno. Salt and pepper to taste.

    Stir well and cooked until meat is done, breaking up meat as you go.

    Take off heat and add sesame oil, green onion, and cilantro. Stir well.

    Add mix to lettuce wraps and serve with fresh lime.
