Ingredients

  1. 1 packagesdry tortellini
  2. 1 packageskielbasa
  3. 1/2chopped onion
  4. 2 tbspolive oil
  5. 1 canchopped tomatoes with juice
  6. 8 cupchicken broth
  7. 4 tbspminced garlic
  8. 1/2 cupchopped spinach
  9. 1/2 cupchopped kale
  10. 1/2 tspred pepper flakes
  11. 1 tspchopped parsley
  12. 1/2 tspthyme
  13. 1/2 tspchopped oregano
  14. grated parmesan cheese

Cooking Instructions

    Heat olive oil in large soup pot on medium heat.

    Thinly slice the kielbasa and add to pot. Cook for about 5 minutes and add the onion, garlic, and spices. Cook until the onions are translucent.

    Add broth and tomatoes and bring to a boil. Once it boils turn heat down to low and simmer for 10 minutes.

    Add the tortellini and cook until tender.

    Add the chopped kale and spinach and remove from heat after a couple minutes.

    Serve with parmesan cheese and a nice, crusty loaf of bread. Enjoy!

One of the best soups we have ever made. Hubby said to put it in a weekly rotation. It's that good.
