This is a great summer dish for grilling, super easy, fast and delicious!

Ingredients

  1. 4ears of fresh corn on the cob, husked and silks removed
  2. 3 tbspseasoned rice vinegar
  3. 2 tbspolive oil
  4. 1/3 cupsmall diced red onion
  5. 1/4 tspblack pepper and salt to tsste
  6. 1/4 tspcajun seasoning
  7. 1/2 tsphot sauce, such as franks brand
  8. 1 tbspfresh chopped basil leaves
  9. 4 slicecrispy cooked bacon for garnish

    Preheat grill to high heat.

    MAKE DRESSING

    In a large bowl combine vinegar, oil, onion, pepper, cajun seasoning, hot sauce and basil whisk to combine and set aside to wait for grilled corn

    Place corn directly on grill, do not add butter or oil, just plain dry corn. Grill turning as brown spots appear, about 5 minutes total time. Remove from grill and using gloves or holding the top of the corn cob with paper towels (to protect your hands from the heat) cut kernals off cob. Combine with dressing and mix well.

    Garnish with bacon, crumbled. We have everyone add the bacon on each portion to keep it crispy.

    This salad is also good cold!

“Fenway” passed away on 2/3/2021. For the last year she tried to teach her husband of 42 years how to cook like her. Although I will never be as good of a cook as her she did pass on her passion for cooking. Therefore, I will attempt to carry on her legacy and maintain/update her site. My wife was a Registered Nurse, a licensed deep water aerobics instructor, a mother to our 2 children and a fantastic cook. We grew up in New England but have been fortunate to live all over the US. I am now retired, missing her terribly, but thankful for all the years we had together and all her cooking lessons.
