Ingredients

5 servings
  1. 1 Cupsliced Mushrooms
  2. 4-5 cupsleftover Rice
  3. 1 cupCorn kernels
  4. 1 tbspminced Garlic
  5. 1Bay leaf
  6. 1Cinnamon stick
  7. 3Cardamom pods
  8. 1 tspSalt
  9. 1 tbspLemon juice
  10. 1 tbspChilli flakes
  11. 2thinly sliced Onions
  12. 2 sprigsCurry Leaves
  13. 2 tbspOil
  14. 1 tbspGhee/Clarified Butter
  15. 1 pinchAsafoetida or Hing
  16. 1 tspCaraway seeds

Steps

15 minutes
  1. 1

    Make plain rice and set aside. Or can use leftover rice too.

  2. 2

    Heat ghee and oil. Saute the onions and garlic.

  3. 3

    After the onions change colour to light brown, add in the whole or khada masalas along with all the other ingredients.

  4. 4

    No need to saute much. Cover and cook until tender. The veggies should retain their crunch.

  5. 5

    Adjust salt accordingly.

  6. 6

    After 10 minutes, transfer the contents to the bowl with cooked rice and give it all a good mix.

  7. 7

    Garnish with coriander and serve hot with any pickle.

  8. 8

    If you choose to add curry leaves, then add them in the beginning along with the onions.
