Make plain rice and set aside. Or can use leftover rice too.

Heat ghee and oil. Saute the onions and garlic.

After the onions change colour to light brown, add in the whole or khada masalas along with all the other ingredients.

No need to saute much. Cover and cook until tender. The veggies should retain their crunch.

Adjust salt accordingly.

After 10 minutes, transfer the contents to the bowl with cooked rice and give it all a good mix.

Garnish with coriander and serve hot with any pickle.

If you choose to add curry leaves, then add them in the beginning along with the onions.
