Ingredients

2-3 servings
  • chicken
  • 1 1/2 lbboneless, skinless chicken breasts, pounder or sliced to 1/4 inch thickness
  • 2large eggs
  • 2 tbspwater
  • 1/2 cupRomano cheese, grated
  • 1/2 cupall purpose flour
  • 1/2 tspblack pepper and salt to taste, divided use
  • 1/2 tspItalian seasoning
  • 1 tsphot sauce, such as Frank's red hot
  • 1-2 tbspolive oil
  • Three citrus butter sauce
  • 1shallot, finely chopped
  • 2garlic cloves, minced
  • 1/2 cupfresh orange juice
  • 1 tbspfresh lemon juice
  • 1 tbspfresh lime juice
  • 1 tbspcream, heavy, light or half and half
  • 6 ozbutter, cold cut into cubes
  • 1/4 tspblack pepper and salt to taste
  • 1 tsphot sauce, such as Frank's red hot
  • garnish
  • 1/4 cupchopped fresh parsley
  • 2 tbspchopped fresh chives

Steps

    Whisk eggs, water, hot sauce and half of pepper and salt in a bowl

    On a plate combine flour, romano cheese, remaing pepper, salt and Italian seasoning

    Dip chicken in egg mixture, shaking off excess then coat lightly but completely with flour/cheese mixture.

    Heat olive oil in a large non stick skillet. Cook chicken until golden brown and cooked through, about 3 minutes per side. Don't crowd pan. Remove chicken as done and tent with foil.

    When all the chicken is cooked and removed add shallot and garlic to skillet and soften for a minute, then add orange, lemon and lime juice, reduce by 1/2 and add cream, pepper, salt to taste and hot sauce and simmer another minute.

    On low heat, add butter cubes, a couple at a time, whisking all the time until butter is gone and sauce is creamy. Remove from heat. Whisk in parsley and chives.

    Serve sauce over chicken immediately as sauce can not be reheated successfully.

“Fenway” passed away on 2/3/2021. For the last year she tried to teach her husband of 42 years how to cook like her. Although I will never be as good of a cook as her she did pass on her passion for cooking. Therefore, I will attempt to carry on her legacy and maintain/update her site. My wife was a Registered Nurse, a licensed deep water aerobics instructor, a mother to our 2 children and a fantastic cook. We grew up in New England but have been fortunate to live all over the US. I am now retired, missing her terribly, but thankful for all the years we had together and all her cooking lessons.

Excellent!!! Made it for company and it was a hit! Very flavorful. I did have to add more olive oil in the frying stage. I will definitely make this meal again. Thank you!
