I like that you can add more onions or garlic. Less salt or make it sodium free. The more natural foods we can consume, the better!
Steps

In a preheated stock pot on low heat, add oil and onions.

Saute until they are translucent, about 5 minutes.

Add all other ingredients, raise heat to medium- high, bring to boil, then reduce to simmer.

Cover and simmer 2 hours stirring occasionally.

Let cool and blend in food processor or blender.

Keep in air tight container in refrigerator.

NOTE: To make a spicier ketchup, just add a few splashes of sriracha hot sauce or finely grated horseradish!

Keep old store bought ketchup jar, clean out and add your own homemade ketchup:-)
