I saw this on a Rachel Ray show.The sunflower kernels are my idea I think they add a nice salty crunch.Next time I'm going to try cantaloupe with strawberry sorbet.Have fun and be creative here.Please send me your ideas on combinations too!

Ingredients

4 servings
  1. 1honey dew melon or cantaloupe
  2. 1lime
  3. 1fresh mint leaves (optional)
  4. 1 pintslemon sorbet (or flavor of choice)
  5. sunflower kernels

Cooking Instructions

    Cut melon in half and spoon out seeds

  2. 2

    Now cut the halves in half.

  3. 3

    Turn the fourths on side and remove. Some of the rind so they will sit flat.

  4. 4

    With a knife cut slits in melon make sure you dont cut through rind (this makes it eaiser to eat)

  5. 5

    Now cut the lime and squeeze juice over melon, add mint (optional) and add the sorbet. (I used lemon and mango here)

  6. 6

    Top with sunflower kernels and enjoy!
