I've seen many egg/Avocado salad combos and have tried a couple. They were good but a little bland. I added a smoky cumin(I love cumin!!) and a little cayenne for kick! Its so good!! Feel free to double, triple whatever...this was an experiment so I only used two eggs.

Ingredients

  • 2eggs hard boiled and peeled
  • 1/2avocado
  • 1/8 cupfinely diced celery
  • 1/8 cupfinely diced onion
  • 2 tbspplain greek yogurt (or use light mayo)
  • 1 tbspfresh lime juice
  • 1/2 tspground cumin
  • 1/2 tspcayenne pepper (ground)
  • 1salt and pepper to taste

Steps

  1. 1

    Chop eggs and add to a bowl. Chop Avocado half and add to eggs. Add celery and onion. Mix all remaining ingredients and pour over and mix well. Voila!! It's so easy, super yummy and a great source of protein and healthy fats!!!!
