Ingredients

  1. 6boneless chicken breast cooked and cut into cubes.
  2. 1 can(15.5 oz) red kidney beans
  3. 1 can(15.5 oz) black beans
  4. 1 can(15.5 oz) white kidney beans or northern beans
  5. 1 can(14.5 oz) diced tomatoes
  6. 2 cupcups chicken broth
  7. 1 cuporange juice
  8. 1 largeonion, diced
  9. 2green bell peppers, diced
  10. 1red bell pepper, diced
  11. 1yellow bell pepper, diced
  12. 1chipotle pepper in adobe sauce, chopped. They are a bit mushy . Use more than one if you prefer a spicier stew.
  13. 1 tspsalt
  14. 1 tbspground cumin, more if you prefer
  15. 1 tspcilantro, garlic powder & dried basil

    Combine all ingredients into crockpot and stir. Set crockpot to high and timer for 6 hours.

  2. 2

    After about 3 hours, remove a half cup of broth and add corn starch to it until it resembles a thick creamy (no lumps) gravy. Pour into crockpot and stir thoroughly.

  3. 3

    When finished cooking, this will be a thick, hearty and spicy stew. Serve with cornbread, side salad and sweet tea (suggested)...
