This is a great combination. We love stroganoff, I make it the traditional way on pasta and change up the meat, using meatballs or chicken. This recipe is a quick version on a baked potato. Add a salad and dinner is ready!

Ingredients

  1. POTATOS
  2. 6medium russet potatos, baked or microwaved until tender
  3. 1/2 tbspmelted butter
  4. 1/2 tspgranulated garlic or garlic powder
  5. 1/4 tsppepper and salt to taste
  6. 1 tbspgrated parmesan cheese
  7. BEEF STROGANOFF TOPPING
  8. 1 lbtender beef steak cut into strips. I used rib eye
  9. 6 ozsliced button mushrooms
  10. 1 smallonion, chopped
  11. 2garlic cloves, minced
  12. 2 tbspdry white wine
  13. 1/4 cuplow sodium beef broth
  14. 1 cupsour cream
  15. 1 tspWorcestershire sauce
  16. 1/4Dijon mustard
  17. 1 tsphot sauce, such as Franks brand
  18. salt and black pepper
  19. 1 tspchopped parsley
  20. olive oil for sauteing
  21. GARNISH
  22. 1 tspcopped parsley and/or chives
  23. cracked black pepper

Cooking Instructions

    Preheat oven to 425. Spray a baking pan big enough to hold potatoes in one layer with non stick.spray.

    Brush each potato with melted butter, sprinkle with garlic, salt, pepper and parmesan cheese.com

    The potatoes will take about 15 minutes, turning once until hot and skin is crispy.. Put them in the oven while you make the topping

    MAKE STROGANOFF SAUCE

    Season beef with salt and pepper. Heat a film of oil in a medium saucepan, sear beef strips just until brown, remove to a plate

    Add mushrooms, onions and garlic to skillet steak was cooked in. Cook until soft add more oil if needed. Add wine and deglaze pan cooking until wine is almost gone.

    Add beef broth, sour cream, Worcestershire sauce, mustard,hot sauce and salt and pepper. Bring. to a simmer, cook.until slight thickened about 3 minutes,add beef strips with juices and stir in parsley., heat through.

    Split hot baked potato, fluff inside with fork.

    Spoon beef with sauce over potatoes, garnish with parsley and cracked black pepper

“Fenway” passed away on 2/3/2021. For the last year she tried to teach her husband of 42 years how to cook like her. Although I will never be as good of a cook as her she did pass on her passion for cooking. Therefore, I will attempt to carry on her legacy and maintain/update her site. My wife was a Registered Nurse, a licensed deep water aerobics instructor, a mother to our 2 children and a fantastic cook. We grew up in New England but have been fortunate to live all over the US. I am now retired, missing her terribly, but thankful for all the years we had together and all her cooking lessons.
