Ingredients

  1. 2/3 cupuncooked long grain rice
  2. 2 cupcorn
  3. 1 can(15 oz) black beans, rinsed and drained
  4. 6green onions, sliced
  5. 1/4 cupjalapeno chopped
  6. 1/4 cupcanola oil
  7. 2 tbspcider vinegar
  8. 1 tbsplime juice
  9. 1 tspchili powder
  10. 1 tspmolasses
  11. 1/2 tspsalt
  12. 1/2 tspground cumin

Cooking Instructions

    Cook rice according to package directions. Meanwhile, in a large bowl, combine the corn, beans, onions and jalapenos. In a jar with a tight-fitting lid, combine the remaining ingredients; shake well.

    Stir rice into corn mixture. Add dressing and toss to coat. Cover and refrigerate for at least 2 hours.
