Green flattened rice

Ingredients

  1. 100 gmsthick flattened/beaten rice (poha)
  2. 150 gmscoriander leaves with stems
  3. 2 tbspnfreshly grated/ desiccated coconut
  4. 2green chillies
  5. 1 pinchturmeric powder
  6. Asafoetida 1 small pinch
  7. 1/2 tablespoonJaggery powder
  8. Juice of one medium size lemon
  9. Mustard and cumin seed ¼ teaspoon each
  10. 1/2 teaspoonsplit black gram (Urad daal)
  11. Curry leaves 1 sprig
  12. 1/2 teaspoonOil
  13. As neededSalt
  14. as neededWater

Cooking Instructions

    Wash the flattened rice, drain completely and keep aside.

  2. 2

    Dry grind grated coconut, roughly chopped coriander leaves, green chilies, jaggery, lemon juice without adding water to make a coarse mixture.

    Heat oil in a nonstick pan. Add mustard seeds, cumin seeds and allow to splutter.

  4. 4

    Add black gram,curry leaves, asafoetida and turmeric powder and fry for few seconds.

  5. 5

    Next add green peas and saute for 1 to 2 minutes. Now the beaten rice, salt and mix well.

  6. 6

    Finally add the coriander mixture and mix till everything well incorporated.

  7. 7

    Cook covered for 2 to 3 minutes and then turn off the heat.

  8. 8

    Serve hot with curd if desired or just the dish is very flavourful. Enjoy!
