Orange infused carrot & coconut mini pancakes

So this morning, I needed something light easy to make, for breakfast & decided to make pancakes with a twist.
I made these pancakes with a non-stick pan, eliminating the use of oil to fry.

So this morning, I needed something light easy to make, for breakfast & decided to make pancakes with a twist.
I made these pancakes with a non-stick pan, eliminating the use of oil to fry.

Steps

Mix milk, eggs, oil, & juice from orange till well incorporated.

Get orange zest from the orange by grating the back of the orange with the small grating side of a grater. Add zest & sugar to milk mixture.

Sift in flour & baking powder, mixing till well incorporated but not too much, a little lump is fine.

Divide batter into two, add 1/2 of the coconut to 1 batter, & 1/2 of the carrot to the other batter.

Heat up a non-stick pan and drop batter in small circles using a spoon, decorate top with leftover coconut & carrot accordingly. Flip over pancake discs as soon as bubbles start to form (about 1minute).

Serve with fruit juice or beverage of choice.
