Ingredients

  1. 2.2 lbschicken drumsticks (1 kg)
  2. 1.1 lbsfresh egg noodles for Khao Soi (1/2 kg)
  3. 1 cupvegetable oil (240 ml)
  4. 3 cupscoconut milk (720 ml)
  5. Curry Paste:
  6. 10dried red chilies
  7. 10 clovesgarlic
  8. 10small shallots
  9. Peel from 1 kaffir lime
  10. 5 piecesfingerroot
  11. 2 piecesfresh turmeric
  12. 2 tablespoonssliced lemongrass
  13. 2 tablespoonspalm sugar
  14. 3 tablespoonsshrimp paste
  15. 1 tablespooncurry powder
  16. Chili oil (chili flakes fried in oil)
  17. Toppings:
  18. Shallots
  19. Pickled mustard greens
  20. Lime
  21. Cilantro
  22. Green onions

Steps

  1. 1

    Pound all the curry paste ingredients together until smooth.

  2. 2

    Heat about 1 cup (240 ml) of coconut milk in a pot until it starts to boil. Add the curry paste and stir-fry until fragrant. Add the curry powder dissolved in a little water.

  3. 3

    Add the chicken and stir to coat. Add a little water, then add the palm sugar. Pour in the remaining coconut milk and simmer until the chicken is tender.

  4. 4

    Heat vegetable oil in a pan. Once hot, add some of the egg noodles (separated) and fry until golden and crispy. Set aside for topping.

  5. 5

    Boil the remaining egg noodles in boiling water for about 1 minute, then transfer to cold water to stop the cooking.
