Caulimash Stuffed Bell Peppers

This is an excellent recipe to replace carbs!

Ingredients

6 servings
  1. 3bell pepper (sliced in half and seeded)
  2. 1 headfresh cauliflower or 2 bags of frozen cauliflower
  3. 2 tablespoonsbutter
  4. 1/2 cupmilk or whipping cream
  5. 1/4 cupshredded mozzarella cheese
  6. 1/4 cupshredded parmesan cheese
  7. to tastesalt and pepper

Cooking Instructions

    Boil cauliflower until very soft

  2. 2

    Place cauliflower and some of the liquid from pot into blender

  3. 3

    Blend cauliflower, milk or cream, butter, salt and pepper until firm consistency.

  4. 4

    Fill each pepper half with caulimash.

  5. 5

    Place pepper halves into pan with 1/4 inch of water on bottom of pan.

  6. 6

    Top each pepper half with cheese mixture (mozzarella and parmesan). If preferred, cheese can be added after baking.

    Bake at 350 degrees for 30-40 minutes
