Sausage and kale soup

Ingredients

  1. 1 packageslink sausage 8oz
  2. 1/2 buncharugala
  3. 1/2 bunchkale
  4. 1/2onion
  5. 1/2 cupmilk

Cooking Instructions

    Cook sausage in medium saucepan, chopping into crumbling pieces.

    Drain grease

  3. 3

    Roughly chop onion and add to sausage and cook until onions are clear.

  4. 4

    add 4 to 6 cups water or stock. ( I use water)

  5. 5

    Roughly chop arugala and add to pot

  6. 6

    Roughly chop kale and add to pot

  7. 7

    Simmer until greens begin to wilt, then add milk

  8. 8

    This recipe can easily be modified into a vegan one by exchanging sausage for soy replacement or tofu, and the milk can be relaced with almond milk or simply omitted.
