  • 12Carrots
  • 3 tbspOlive oil
  • 1 1/4 tspKosher salt
  • 1/2 tspPepper
  • 2 tbspMinced fresh dill of flat leaf parsley

    Preheat oven to 400°F.

  2. 2

    If carrots are thick, cut them in half lengthwise. Slice carrots diagonally into 1 1/2 inch thick slices.

  3. 3

    Toss them in a bowl with olive oil, salt and pepper. Place on baking sheet and roast for 20 minutes. Toss carrots with minced dill or parsley and serve.
