
Crispy Potato Wedges

Preheat oven to 375

Peel and cube potatoes.

Use enough olive oil to coat pan. Heat oil on medium-high.

When oil is hot (I drop a potato in and when it sizzles I know it is good to go!) place potatoes in the pan. Fry for 3-4 minutes or until they start to brown. Make sure to stir often to prevent sticking.

Add an water, cover pan and steam 4-6 minutes.

Remove from heat. Turn heat to high, stirring frequently, until all water is gone.

Place potatoes on cookie sheet spread out evenly.

Add chopped butter to the potatoes.

Bake 17-20 minutes, stirring three times.
