  3. 1 mediumSweet potato, cubed
  4. 1 mediumApple, cubed (Fuji or firm)
  5. 1 cupOnion, diced
  6. 1 cupMushrooms (seasonal), cubed or thinly julienned
  7. last 4 minutes
  8. 2 cupCabbage, Kale, Broccoli (any greens), shredded or coarsely chopped
  9. 1 cupCelery
  10. 1 tspMustard, dried
  11. 1 dashSalt
  12. 1 cupWine, whatever is available
  13. 1 cupFrozen preserves (for sweetness in place of wine)
  14. 1Top with pomegranate seeds or other fruit
  15. 1Lay on bed of fresh, julienned kale greens

    This side dish is usually a general emptying of what's in the fridge... So be brave and switch out ingredients. Parsnips and beets work well with the sweet potato, but the apple or other fruit is key to pairing with pork.
