prepare sauce day before and keep in fridge

prepping sauce: mix both vinegars, sambol oebleke, garlic, sugar, and green onion

wings in a skillet in oven for15 min at 400°F

for bleu cheese sauce: mix bleu cheese crumbles, onion, pepper, sour cream, mayo, w-sauce, salt, and white pepper

wings on stove over med-med high heat add some sauce compared to how many wings you do at a time add 1 Tbl of butter per 6 wings cook to reduce and start to caramelize then cook wings on grill or broiler to brown and mark put back in pan and reduce a little more put on plate and serve with celery salad

to make celery salad: slice celery into about 1/2 inch U shaped chunks, add bleu cheese mixture, and dill mix and serve with wings
