First off, you want to start off by cutting each of the ingredients and separating them in bowls. In a pan, pour a bit of olive oil and turn stove on medium heat. When oil is hot, put the sliced onions and turn down the heat to low. You might want to put a cover on it.

Once the onions are almost caramelized, turn the heat off. In a separate bowl, mix all three eggs and add salt, cumin, and paprika. Add the onions to the bowl with the eggs. Mix the eggs and onions

In a separate pan, pour a bit of olive oil and put stove on medium-high. When oil is hot, put chopped up garlic and the diced chorizo. Once the chorizo is cooked and the garlic is golden, add kale. Once kale is cooked, add the mushrooms. Splash on a bit of white wine.

Once the mushrooms are cooked, add the egg/onion mixture and set the heat on low. Put a cover on it and set a timer for 10 minutes. When the top is almost fully cooked, place a plate on top of the pan and flip. Then slowly place the tortilla back onto the pan to cook other side.

Put a timer for 5 minutes and bam youre done! Enjoy! :)
