Steps

Whisk the eggs in a small bowl with a pinch of salt.

Preheat the oil in a frypan to a medium heat.

Fry whisked egg on medium, turning when one side is golden brown (about 1.5 mins each side).

Remove egg onto a plate to cool. In the same frypan, put chopped vegetables (and meat if you have it). Turn the heat down a little.

Saute until the onion and carrot are becoming soft. Add most of the ketchup and chilli flakes. Mix through well.

Let fry and add 2 cups cooked rice. Mix well and add remaining ketchup.

Put cooled egg into a small bowl, lining the bowl with the egg.

Place the cooked rice mixture into the "egg bowl" and let cool for a few minutes.

Flip the bowl over onto a plate and you are done! Garnish with tomato sauce or spring onions. (I like to serve mine with a little creamy side salad.)
