I believe in substitutions when baking. This recipe is a combined recipe I made up when looking for moist corn muffins on line. It's easy, quick and delicious.

I believe in substitutions when baking. This recipe is a combined recipe I made up when looking for moist corn muffins on line. It's easy, quick and delicious.

Cooking Instructions

On a low flame, melt the 6 tbls of butter.

Preheat the oven to 425°F.

In a large bowl, Mix all dry ingredients: corn meal, flour, salt, baking powder and baking soda
- 4
In a small bowl, combine coconut milk, butter and honey while the butter is warm
- 5
Pour the milk mixture in with the dry ingredients. Mix well.

Grease the muffin pan with the melted butter drippings from the pan or corn oil. Place about 3 tablespoons of the mixture into each partition of a muffin pan. Bake in the oven 20-25 minutes or until golden brown.

Using Ajinomoto brand's mayonnaise, I was able to cut the calories by 55%. Instead of butter, I used a low calorie margarine. You can't really taste the mayonnaise, but it adds a wonderful fluffy texture to the finished muffins. These are our standard apple snack. Sweet and sour ruby apple chunks are scattered throughout the muffin. They have a gentle cinnamon aroma. The abundant amount of milk and yogurt makes them moist and fluffy. Kids love these autumn flavored first-rate muffins. (^-^)It's best to use Ruby (Jonathan) apples. If you use a different brand, it's a good idea to add some lemon juice to offset the sourness. Ruby apples are small, so if you use a brand of larger apples please adjust the amount accordingly. I kept the skins on this time but feel free to peel them if you would like. Adjust the amount of cinnamon to your taste.
