  • 1 tbspKosher salt
  • 8 ozThin rice noodles
  • 8 ozSliced mushrooms
  • 2 tspOlive oil
  • 2 cupPork from slow cooked pulled pork
  • 16 1/2 ozAngel hair coleslaw mix
  • 4 smallGreen onions (green & light green parts only)
  • 1/2 cupLoosely packed cilantro leaves
  • 6 cupChicken broth
  • 1 tbspGrated fresh ginger
  • 4Lime wedges

Steps

  1. 1

    Boil 8 cups water and salt. Turn off heat and Submerge noodles; let stand for 20 minutes or until tender. Divide into 4 bowls.

  2. 2

    Sauté mushrooms in hot oil in a medium skillet over medium heat 5 minutes or until tender.
