Ingredients

  • 1 cupwater (240 ml)
  • 2 tablespoonsThai sour curry paste (kaeng som paste)
  • 1 tablespoonfish sauce
  • 1 tablespoonpalm sugar
  • 1 tablespoontamarind juice
  • 1 tablespoonlime juice
  • Swai fish fillet (or other white fish)
  • Vegetables of your choice (such as green beans, carrots, broccoli, napa cabbage)

Steps

  1. 1

    Pour the water into a pot and bring to a boil. Add the sour curry paste.

  2. 2

    Add the fish sauce, palm sugar, and tamarind juice.

  3. 3

    Once boiling, add the fish fillet and the vegetables that take longer to cook (such as green beans, carrots, and broccoli).

  4. 4

    When those vegetables are cooked, add the napa cabbage and cook until tender.

  5. 5

    Turn off the heat, then add the lime juice. Adjust seasoning to taste.
