Preheat oven to 350°F

cook onion and garlic in olive oil then add meat and cook thoroughly then cool

In a bowl combine ricotta, eggs, 1/4 cup Parmesan, parsley, salt and pepper. Add meat mixture and mix

For the sauce, puree tomatoes in the blender then in a skillet, fry onions and garlic in the oil, add the tomatoes, basil and Parmesan. Cook for 5 min.

Spoon enough sauce to cover the bottom of a casserole dish then place filled pasta on top of sauce. To fill cannelloni shells, put filling into a zip lock bag, cut one corner and pipe filling into each pasta tube. Spoon the rest of the sauce over cannelloni making sire to cover them completely. Put mozzarella slices on top and cook covered according to pasta directions.
