Ingredients

1 serving
  1. 8 ozraw tilapia fillet
  2. 1 pinchsea salt
  3. 1ground black pepper
  4. 2 tspextra-virgin olive oil
  5. 1/2 clovegarlic, finely chopped
  6. 3 cupchopped fresh kale
  7. 3/4 cupcanned diced tomatoes, with juice

Steps

  1. 1

    Season both sides of tilapia with salt and pepper if desired; set aside.

  2. 2

    Heat oil in large skillet over medium heat.

  3. 3

    Add garkic and kale; cook, stirring frequently, for 1 minute.

  4. 4

    Add tomatoes (with juice); bring to a boil. Reduce heat to low.

  5. 5

    Place tilapia fillet on top of kale mixture; cook covered, for 1 minute. Gently turn tilapia over and cook for 2 to 3 minutes, or until tilapia is cooked through and flakes easily when tested with a fork.

  6. 6

    Remove from heat and serve.
