My kids were begging me to make "breakfast for dinner", particularly hash browns, but i was out of potatoes (i usually use yukon gold for most potato dishes). since i had some refrigerated hash browns i bought on sale hangin around, i figured i'd give them a try, and they came out terrific...but without the sore arm from all the peeling and grating! :-D

Ingredients

9 servings
  1. 3 cupshredded hash browns
  2. 2 1/2 tbspflour
  3. 2lightly beaten eggs
  4. 3 tbspmelted butter
  5. 1 1/2 tspwater
  6. 1 1/2 tspsalt
  7. 1 tbspvegetable oil
  8. 1 tbspbacon fat (if you're health conscious just double the veggie oil)
  9. 1/2 cupshredded cheddar cheese (i use extra sharp), optional

Steps

  1. 1

    Put potatoes in strainer and drain THOROUGHLY! I use a potato masher to press down to remove as much liquid as possible.

  2. 2

    Transfer potatoes to large bowl and add flour, eggs, melted butter, water, and salt. if you are using cheese, add that as well. mix well. i use a fork as it thoroughly combines the mixture.

  3. 3

    Heat oil in large skillet over medium high heat. gently drop mixture, 1/3 cup at a time, into oil. do not crowd.

  4. 4

    Fry until golden brown on both sides and drain on paper towels.

  5. 5

    Enjoy plain or top with sour cream, ketchup, bacon bits, or whatever else you prefer. enjoy!

im an italian mom from nj with 3 very fussy eaters...3 kids (ages 16, 20 & 24) :D very hard to find dishes they all agree on, and now my oldest became a vegetarian so even harder! lol. but love this app and all the great people! i love cooking for and spending time with my family. all things beauty, true crime books and shows,and I'm very interested in homeopathic and natural cures, and living a positive and grateful life... and im a diehard NY Ranger fan.oh, and i LOVE bacon! so thats me :-)

Bacon fat is like OLD SCHOOL HEALTHY LOL... I'm thankful I grew up in that time cuz it's like Bacon's cooking, you get the knife put it in the glass jar, and wait for that bacon fat.... save it for the next couple cooking sessions, or recipe seasonings ...fried eggs
