Ingredients

  1. 4.4 lbszucchini (about 2 kg)
  2. 3 cupshot water (about 710 ml)
  3. For the filling:
  4. 2 cupsEgyptian rice (about 400 grams)
  5. 1.1 lbsground beef (about 500 grams)
  6. Salt
  7. Red pepper
  8. Sweet paprika
  9. 1little olive oil
  10. 6 clovesgarlic, minced
  11. Dried mint
  12. 3 tablespoonstomato paste

Steps

  1. 1

    Core the zucchini, wash them, and prepare the filling.

  2. 2

    Wash the rice, then add the ground beef, spices, olive oil, garlic, and tomato paste. Mix everything together well.

  3. 3

    Stuff the zucchini with the filling, arrange them in a large pot, place over heat, add the hot water, and cover the pot with a large lid.

    Once it comes to a boil, reduce the heat, add salt, garlic, olive oil, and 3 tablespoons tomato paste.

    Let cook until the zucchini are tender. Enjoy!
