Easy and quick vegan, low-fat meal using leftover ingredients :)

Ingredients

  1. 1Black beans - small tin
  2. 1Garlic glove
  3. 1Onion
  4. Any left over veggies. This recipe:
  5. 1/4Red cabbage
  6. 1/4Mushrooms - tray
  7. 1/4Grilled pineapple with cinnamon
  8. 1/4Courgette
  9. 1/4Cauliflower
  10. Ground cumin powder
  11. Soy sauce
  12. 1 bunchBaby spinach

Cooking Instructions

30 mins
  1. 1

    Saute onions and garlic in a little water

  2. 2

    Add other left-over chopped veggies, squirt over as much soy sauce as desired and a little more water if needed

  3. 3

    As veggies start to soften, sprinkle over cumin and and other herbs if desired

  4. 4

    Add washed black beans. Stir through til hot

  5. 5

    Serve with potato/rice/salad/stuff in pepper to roast etc. Served in pic with roasted new potatoes (roasted in oven after washing with no fat and rosemary sprinkled on top)
