Ingredients

  1. Rice vermicelli
  2. 2beaten Egg
  3. Thai GF curry paste
  4. Fried Tofu
  5. bean sprouts
  6. Mixed veg
  7. Marinate
  8. 5deboned chicken drumsticks or 2 strips of pork belly (sliced)
  9. 1 tbspoyster sauce
  10. salt
  11. 1 tspsoya sauce
  12. 1 tspsesame oil
  13. sprinkle of white pepper
  14. Optional
  15. 1/4lime
  16. 1 pinchdried shrimp
  17. 2shallots
  18. Coriander
  19. handfuldried anchovies

Steps

  1. 1

    Marinate the meat for about 30 mins.

  2. 2

    In a wok, add oil. add meat and let it cook for about 10 mins. Add Thai curry paste (optional). Mix well.

  3. 3

    Add tofu and cover the lid and continue cooking until the meats are cooked.

  4. 4

    Cook rice noodles in another pot.

  5. 5

    Put the veg and eggs, along with anchovies into the wok

  6. 6

    Add noodles into the wok and mix well.

  7. 7

    Garnish with some chopped red chilli and coriander.

Living in Dublin with my Irish partner who is celiac. My recipes are Gluten Free (GF). Most of my recipes are Asian food and I use soya sauce a lot in them. Regular soya sauce is not GF, but you can get GF one from supermarkets.
