Chicken and Aubegine Bake

Preheat Oven to 400°F Celsius

Slice aubergines about 1cm thick

Crush 2 garlic cloves and add 1tbsp olive spread, melt and mix with the crushed garlic

Place aubergine slices onto a tray and brush with the garlic spread. Place in oven for 10 minutes

Finely chop 1 red onion and begin to fry in olive oil, Finely chop the 4 mushrooms and add along with some mixed herbs. Once soft add the chopped tomatoes, spinach and stripped chicken and simmer for a short time.

layer half the aubergines into the bottom of a baking dish and then layer the contents of the saucepan ontop, followed by another layer of aubergines and the remainder of whats in the saucepan.

make up some cheese sauce using less water to make it thicker, make enough for a decent layer

Use a seeded bagel thats gone a little hard and grate into breadcrumbs and cover the cheese sauce. Put a few knobs of olive spread ontop and bake for 25mins in the pre heated oven.
