Ingredients

  • 12 ozButter, browned
  • 1 1/2 cupAll purpose flour
  • 3/4 cupCake flour
  • 1 1/2 tspBaking powder
  • 1 1/2 tspBaking soda
  • 1 tbspCinnamon
  • 3/4 cupGranulated sugar
  • 3/4 cupLight brown sugar, packed
  • 4 eachEggs
  • 1 tbspVanilla extract
  • 5 eachMedium carrots, shredded
  • 1 cupSweetened flaked coconut
  • 1 1/2 cupPineapple, diced

Steps

  1. 1

    Mix the sugars together, add in the eggs and vanilla.

  2. 2

    Pour in the brown butter, avoiding the black solids on the bottom. Whisk everything together.

  3. 3

    Add dry, use rubber spatula to stir.

  4. 4

    Add carrots, pineapple, and coconut. Fold

  5. 5

    Pour into greased cake pans and bake at 350 for 30-45 minutes.
