I got this recipe out of an in flight magazine. The original recipe called for ground pork and ground veal. I changed it to Italian sausage.

I got this recipe out of an in flight magazine. The original recipe called for ground pork and ground veal. I changed it to Italian sausage.
Steps

Heat large heavy pot over high heat.

Add pancetta, reduce heat to medium and cook for 3-5 minutes.

Add chicken and sausage and cook until browned.

Drain oil from pot and remove meat from pot.

In same pot add onion, carrot, celery, garlic and sage. Saute until translucent

Add tomato paste, chicken stock and reserved meat. Cook until sauce is formed

Reduce heat to low and simmer for 2-3 hours.

Cook pasta according to package then toss with olive oil

Just before serving add butter and heavy cream to sauce and cook for 5 minutes.

Mix sauce and pasta then garnish with basil
